Over heating problem and air filter many questions

Hello to all:

I have recently traveled in August's heat, high altitude, and mountain climbing and experienced high temperatures which triggered my fuel pump shut off. I also had a rise once on level flat ground at high speeds. Once I slowed down to 60 MPH all was fine. I know to expect the rise in the radiator but I need to see what I can do to reduce the shut down again. The only thing I have done to the cooling system  before this incident exempt to drain and replace the fluid. I didn't use a flush chemicals yet but the fluid that was drained was mostly clean. I have only clean water in it now. I ran the engine and checked all the hoses with a heat gun. All the hoses and fittings read the same as the temp gauge indicated - 170 degrees except the bottom hoses coming from the bottom of each radiator. They read 110 degrees on the heat gun. I have no leaks and the outside of the radiators look good, I sprayed water on fins to clean.

1. What is the normal thermostat setting? Are there two thermostats?
2. Which way does the fluid travel through the radiator? bottom hose in and up or top hose in down?
3. How can I check to see circulation in the radiators?
4. The reservoir canister level never changes it level, should it?
5. What else can I check?

When I was climbing,  the engine was choking, big puffs of black smoke came out the exhaust. It is a new air filter.
I looked at the canister and checked the intake entrance.

1. Why is there a small intake over the voltage regulator?
2. Can I put a small blower on the air filter with a switch to activate on hills?
3. what else can I Check?

    Never mind,  I noticed the coach on the bottom line.

They have 2-tsats most are 175 to 180F ,the path on the 71 series is from the water pump through the oil cooler through the engine to the radiators with  the temp not equal on the top and bottom I would say it radiator rodding time,check the temp below the Tsat housing on each head first

In 45 years, I'm sure radiator needs removed, cleaned, rodded, and or replaced. Does that have small dual radiators like the 40 footers with the squirrel cages? Have any idea what the altitude was on those hills? You were keeping engine revved up 1900 to 2100 on those hills? If your foot was to the floor on the hills, better to drop a gear so you don't need to apply full throttle.
