The Bendix website (bendix.com) has a bunch of good information.  One of the best items is a series of videos (BW1957) which they sell for $15. 

I have obtained permission to publish this video on a free safety DVD I am creating, but the progress has been very slow. 

The video is probably much more than you have to know, but the format will give you lots of good information which you can absorb (as opposed to going to sleep trying to understand all the written information).

If you really want to learn about air brakes, attend their excellent class.
