I am not sure exactly what you are asking.

--never seen a door jamb with upholstery.  It seems like the door would be really hard to close.

Most of the moldings I have seen were stained wood or unfinished stainless steel/aluminum.

I have a black vinyl piece that goes from top to bottom that attach with stainless screws and washers. It is loose where it folds to the inside of stairwell when door closes. You can see in it if you look but when the door is open it looks good from outside looking in.

Eddie- Is the vinyl piece screwed to the inside face of the door frame and to the door jamb-- exactly where the arrows are pointing for "Door Frame" and "Door Jamb"?

Yes Yes ,That's it the piece of vinyl between door and dash. To cover the janb and door hinge? Does the Vinyl fold on its own? What does other door jambs look like?

I removed the old 1 and threw away. As u can see I don't think it would fit again ,as I completely redid the dash!!
. I was thinking about some sort of small but big spring type thing to help it fold back with door shut!!

Yes. it goes from the door to the dash. As the door closes it bends on its own and just folds up. If I get a chance this week I will go snap a pic of it.
