Even if it's only interior grade, 1" thick Maple plywood is expensive stuff - if all you need is a sub-floor beneath carpet or tiles I would sell the Maple ply and use the money to buy something a bit more suitable. However, if the length of one of the sheets is sufficient to span the floor area in question you could have a beautiful lacquered Maple floor with no joints in the grain, and which would also be more stable and durable than any kind of planked wood floor. Regarding glue, because it's interior grade ply I would get it completely cut and sanded to it's final shape, then take it up again and totally encapsulate it with epoxy resin to seal it against any kind of moisture damage - maybe even put a lightweight glass cloth on the top surface to make it bulletproof against damage as well (the resin will make the glass cloth will go transparent, so it can be used under varnish or lacquer - although you cannot tell by looking at them, the decks of wooden boats are often done like this to enable them to withstand lots of abuse whilst still looking good). Glue the ply into final position in the bus using mastic to prevent squeeks.

I'm not sure about the underfloor heating - it would probably be ok, but I would worry about what the localised heat might do to the wood and/or lacquer in terms of shrinking, cracking etc.
