This is the galley area of my bus. On the left side I have space for a 120v dorm fridge. On the right, space for a swivel chair. if you keep adding paint, the counter top will smooth out, and be easier to clean.

I'm thinking of a simple plastic tablecloth - one of the heavy pvc ones, trimmed to fit.
I found the easy way to keep the countertop clean though. When it gets dirty, I just repaint.
