As I'm putting up the wiring and insulation, I remember seeing a flush mount cover that also relocates the controls to the wall. I can't seem to find anything or I'm searching for the wrong terms or something...
Anyone know what I'm talking about?

As Bob said, you are probably thinking of a ducted air system. If it is a Penguin there is a regular air assembly that works with a thermostat, but I believe the upper unit is different too. I would talk to an RV dealer, or see if Dometic can answer the question.
I think he talking about the Comfort Control Center and air box for Dometic any roof top with a upper unit can use a wall thermostat but it takes 12 volts and a relay to work they don't need to be the ducted units Like Bob I thought all the flush mounts were for return air on a ducted system
I have two units as described installed in my 84-9
A/C are older Colman Roof Wart Units with wall mount Thermo's
and flush mount covers on interior ceilings.

Did this on my 87 XL, as well as heat strips. I have Colemans, but Duo-Therm probably has them as well. Look under parts and accessories on D-T website or try AmericanRV.
