Welcome!  Most people do not keep the original bus lavatory, but remove it.  It's in the wrong place, it doesn't have the right capacity, it's just wrong.  Removing it is usually the entrance exam to bus renovation...It's kind of hard and a job well over...   The floor will be replaced usually with plywood as part of a new floor install in general, or piecing in a part floor to match the original, I would suggest any good quality plywood...

Probably most people remove the original AC system, it's a little too big and needs too much maintenance by the time we get them, although there are the exceptions.  More people keep the original heat systems, they work really well but use the original duct work that can be in the way.

At the risk of being called out a bit - explore the archives on the topics you find interesting, and see what others have done.  I found that a very worthwhile way to learn a lot about bus conversions.

I am down in Connecticut about 200 miles from you. I removed the bus bathroom, wasn't easy but it does come out. I am building out a side isle bathroom. I filled the original hole in the corner with foam and just plywood over with my flooring. I kept the original bus heat and air. Had the air rebuilt, needed a new compressor and some repairs. Not cheap $4200 latter. I kept the bus air because I figured if the generator failed while driving then the roof airs were dead and I did not want to put in a smaller powered air unit driven off of the engine. When you get out West in the summer a lot of air is needed to keep cool. I am keeping all my windows even though some are covered from the inside. Maybe some time we can get together and compare thoughts on how we want to do things. Good Luck.

Hello:
Taking out the original restroom in your Prevo is where the fun begins. It's not that difficult. There are a couple "hidden screws" in the ceiling left side by the aux AC. I just used a saws all and cut the wall in half horizontally instead of trying to take the walls out whole, but the left wall can be used later as a template for various things since it's marine grade plywood. Notice how the walls are attached to the ceiling with aluminum channel for later use. You can patch the floor or replace it depending on the "rot" condition.
You mention storage area. I assume you mean the bays. There is no one way to lay out your bays, but most start with locating the water tanks in the last bay. Identify the size/gallons of tanks you need and fit them in your bay. I used 1x2 pine tacked together to make a frame then stapled cardboard to it to use as a template to insure it all fits together in the bay. Size "big tanks" if you dry camp or smaller if you just hookup at the camp ground. But they have to fit in the bay with all the other stuff (pumps, filters, plumbing hardware, maybe wtr htr) so leave enough space for the extras.
I put my electrical mostly in the middle bay, LP tanks in front bay, genset and house batteries will go in middle bay, kept my OTR AC & heat/ductwork. Building the floor plan your way will determine the layout underneath and how it all comes together for you. Plan plan plan Good Luck  Gerry H
