Does anyone know how to adjust these on my 5B? I can close them manually, however I don't want to take the chance to run
down the road with them closed. Would they open when it got to temperature?

There should be a number printed on the back. Probably around 180-195. That's the temp that your shutters should open. If your 5 is similar to my 9 there should be a shutter stat on the main coolant line that lead to the radiator that is where the number should be printed on the back of that assembly. Trace one of the airlines that comes out of that assembly to a filter assembly on your passenger side firewall it is in the shape of the number 8 lying on its back. There should be a finger tightenable shuttoff on both the side and the bottom. Open the one on the side and the shutters should close. If that works as it should. Close that valve and open the one on the bottom which releases the pressure and opens your shutters. Then it's just a matter of getting it up to the temp printed on the back and seeing if your temp levels off.

If it is the same shutter thermostat that GM used on the 4104 it is adjustable by removing a brass sleeve on the thermostat held by one screw.
A small silver knurled wheel under the sleeve is turnable by hand, each turn equals 10* change in the shutter opening temp. The wheel changes the tension on the spring that keeps the air supply needle valve from shutting off the air. When you decrease the tension it allows the valve to close at a lower temp.
I just did mine a couple of days ago because it was waiting until 200* to open.
