Title: Transmission Oil Level

For a MC8, manual transmission, how you guys check transmission oil level? While the engine running? or stop the engine? 
And what type oil do you use to refill?

Engine off, same oil as you use in your engine (should be straight 40 wt. unles you are operating in really cold weather.  Jack

As Jack says, engine off.

I don't know of any manual trans that is checked with the engine running.

That method is only for ATs because they drain back to the sump with the engine off and give false high readings.
