If your engine is DDEC, the best option (and most fun!!) is an electronic dash from Silverleaf (http://www.simply-smarter.com).  I use the VMSpc which is free software for a laptop I place on my passenger side dash.  You need to buy their "magic box" for about 4$400.  You can also use a DD Pro Driver or use a Pro-Link.  All of these connect to the data port in the driver area.

If you have a mechanical engine (pre-DDEC), you are stuck with running wires to the sensors.
